Description

Soft, cake-like cookies bursting with juicy fresh peaches, vanilla, and a delicate dusting of powdered sugar. These light, fruity summer treats are easy to make and perfect for picnics, brunches, or afternoon tea ideal for showcasing seasonal peaches in a simple, crowd-pleasing dessert.

Ingredients

Scale

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup fresh peaches, peeled and finely diced (well-drained)
Powdered sugar, for dusting

Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
4. Beat in the egg and vanilla extract until fully combined.
5. Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms. Do not overmix.
6. Gently fold in the diced peaches using a rubber spatula.
7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 12–15 minutes, or until the edges are lightly golden and the centers are set.
9. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
10. Dust generously with powdered sugar before serving.

Notes

Pat diced peaches dry with a paper towel to prevent soggy cookies.
For best shape, chill dough for 20 minutes before baking if your kitchen is warm.
Vegan option: use vegan butter, flax egg (1 tbsp ground flax + 2.5 tbsp water), and dairy-free powdered sugar.
Add-ins: white chocolate chips, chopped pecans, or a pinch of cinnamon enhance flavor.
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Reheat briefly in the microwave (10 seconds) to restore softness.
