Description

Ingredients
– 2 slices of bread (sourdough, ciabatta, or your favorite)
– 2 tablespoons sun-dried tomato pesto
– 2 slices mozzarella cheese (or shredded for better melt)
– 1 tablespoon butter, softened
Instructions
- Spread 1 tablespoon of sun-dried tomato pesto evenly onto one side of each bread slice.
- Place the mozzarella slices on top of the pesto on one slice of bread.
- Top with the second slice of bread, pesto-side down, to form a sandwich.
- Heat a non-stick skillet over medium heat. Add ½ tablespoon of butter and let it melt.
- Place the sandwich in the skillet and cook for 2–3 minutes, until the bottom is golden brown and crispy.
- Carefully flip the sandwich. Add the remaining ½ tablespoon of butter to the skillet around the edges.
- Cook the second side for another 2–3 minutes, until golden and the cheese is fully melted.
- Remove from heat, slice in half if desired, and serve immediately.
Notes
– For extra flavor, add fresh basil, arugula, roasted red peppers, or caramelized onions inside the sandwich.
– Try different cheeses like provolone, brie, gouda, or cheddar for variety.
– To make vegan: use plant-based butter and dairy-free cheese.
– Assemble ahead of time, but grill just before serving to maintain crispiness.
– Store leftovers wrapped tightly in the fridge for up to 1 day. Reheat in a skillet—never microwave, to preserve texture.
