Description

A gourmet grilled cheese sandwich layered with tangy sun-dried tomato pesto, creamy mozzarella, and golden-buttered bread. Ready in under 10 minutes, this bold and satisfying sandwich is perfect for quick lunches, cozy dinners, or an indulgent snack.


Ingredients

– 2 slices of bread (sourdough, ciabatta, or your favorite)

– 2 tablespoons sun-dried tomato pesto

– 2 slices mozzarella cheese (or shredded for better melt)

– 1 tablespoon butter, softened


Instructions

  1. Spread 1 tablespoon of sun-dried tomato pesto evenly onto one side of each bread slice.
  2. Place the mozzarella slices on top of the pesto on one slice of bread.
  3. Top with the second slice of bread, pesto-side down, to form a sandwich.
  4. Heat a non-stick skillet over medium heat. Add ½ tablespoon of butter and let it melt.
  5. Place the sandwich in the skillet and cook for 2–3 minutes, until the bottom is golden brown and crispy.
  6. Carefully flip the sandwich. Add the remaining ½ tablespoon of butter to the skillet around the edges.
  7. Cook the second side for another 2–3 minutes, until golden and the cheese is fully melted.
  8. Remove from heat, slice in half if desired, and serve immediately.

Notes

– For extra flavor, add fresh basil, arugula, roasted red peppers, or caramelized onions inside the sandwich.

– Try different cheeses like provolone, brie, gouda, or cheddar for variety.

– To make vegan: use plant-based butter and dairy-free cheese.

– Assemble ahead of time, but grill just before serving to maintain crispiness.

– Store leftovers wrapped tightly in the fridge for up to 1 day. Reheat in a skillet—never microwave, to preserve texture.
