Description

Snickerdoodle Bread is a moist, cinnamon-sugar-swirled quick bread inspired by the classic cookie. Bread Batter:

  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup milk

Cinnamon-Sugar Swirl:

  • 2 teaspoons ground cinnamon
  • ¼ cup granulated sugar

Optional:

  • Cream cheese drizzle (cream cheese + powdered sugar + milk)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, milk, melted butter, and vanilla until smooth.
  4. Gradually combine wet ingredients with dry, mixing until just combined (do not overmix).
  5. In a small bowl, mix cinnamon and sugar for the swirl.
  6. Pour half the batter into the loaf pan. Sprinkle half the cinnamon-sugar mixture evenly.
  7. Add remaining batter and top with the rest of the cinnamon-sugar. Swirl gently with a knife.
  8. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack. Slice and serve.

Notes

  • Don’t overmix the batter to keep the bread light and fluffy.
  • Add almond extract, orange zest, or cream cheese drizzle for extra flavor.
