Instructions
- Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
- In a large bowl, beat together granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract until well combined.
- Stir in pumpkin puree until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined—do not overmix.
- Pipe or spoon batter onto prepared sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the tops spring back when lightly touched.
- Let cookies cool completely on wire racks.
- For the filling, beat cream cheese, butter, and vanilla extract until smooth. Gradually mix in powdered sugar until fluffy.
- Spread filling on the flat side of one cookie and sandwich with another.
- Dust with powdered sugar if desired and serve.
