Ingredients

Scale

For the Cake:

  • 1 box yellow or white cake mix (or homemade batter)
  • 1 small can crushed pineapple (with juice)
  • ½ cup coconut milk
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract

For the Frosting:

  • Cream cheese (amount per preference, typically 8 oz)
  • Butter (softened, typically ½ cup)
  • Powdered sugar (to taste, typically 3–4 cups)
  • 1 teaspoon coconut extract

For Garnish (optional):

  • Shredded coconut or toasted coconut flakes
  • Maraschino cherries

Instructions

  1. Preheat oven to 350°F (175°C). Line three 8-inch or 9-inch round cake pans with parchment paper.
  2. In a large mixing bowl, combine cake mix, crushed pineapple (with juice), coconut milk, coconut extract, and vanilla extract. Mix until smooth.
  3. Divide batter evenly among prepared pans. Bake for 20–25 minutes or until golden and set in the center.
  4. Let cake layers cool completely on a wire rack.
  5. Prepare frosting: beat cream cheese, butter, powdered sugar, and coconut extract until smooth and creamy.
  6. Assemble the cake: layer cakes with frosting between each layer, then frost the outside.
  7. Garnish with shredded coconut, toasted coconut flakes, or maraschino cherries.
  8. Chill for at least 1 hour before serving for best flavor and texture.

Notes

  • For stronger coconut flavor, increase coconut extract.
  • For more tanginess, add extra pineapple or pineapple juice.
  • To keep cake moist, brush cooled layers with simple syrup before frosting.
  • Store leftovers in the fridge for up to 3 days; freeze unfrosted layers for up to 3 months.
  • Chill cake before frosting to avoid crumbs.
  • Decoration ideas: edible flowers, tropical fruit slices, piped frosting, or gold leaf for special occasions.
