Description

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8×4-inch loaf pan with parchment paper.
  2. Prepare Persimmon Puree: Peel and mash ripe persimmons until smooth to make 1 cup of puree. Set aside.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  5. Add Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla extract. Stir in the persimmon puree until fully incorporated.
  6. Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Do not overmix.
  7. Optional Add-ins: Gently fold in optional raisins or chopped nuts, if using.
  8. Transfer to Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake: Bake for 50–60 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  10. Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
