Ingredients
Crust:
1 cup all-purpose flour
1/4 cup powdered sugar
1/4 teaspoon salt
1/2 cup melted unsalted butter
1/4 cup finely chopped pistachios
Filling:
3 large eggs
1 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
Zest of 2 lemons
Juice of 2 lemons
1 teaspoon vanilla extract
1/3 cup coarsely chopped pistachios
Topping:
Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
- Prepare crust: In a bowl, mix flour, powdered sugar, salt, melted butter, and finely chopped pistachios until crumbly. Press evenly into the pan. Bake 15–20 minutes until lightly golden.
- While crust cools slightly, prepare filling: whisk eggs, granulated sugar, flour, baking powder, lemon zest, lemon juice, and vanilla until smooth.
- Pour filling over crust and sprinkle coarsely chopped pistachios on top.
- Bake 20–25 minutes until filling is set but still slightly jiggly.
- Cool completely on a wire rack, dust with powdered sugar, and slice into bars.
