Description

Lemon Pistachio Bars are a zesty and nutty layered dessert featuring a buttery crust, tangy lemon filling, and crunchy pistachios. Ingredients

Crust:
1 cup all-purpose flour
1/4 cup powdered sugar
1/4 teaspoon salt
1/2 cup melted unsalted butter
1/4 cup finely chopped pistachios

Filling:
3 large eggs
1 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
Zest of 2 lemons
Juice of 2 lemons
1 teaspoon vanilla extract
1/3 cup coarsely chopped pistachios

Topping:
Powdered sugar for dusting


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
  2. Prepare crust: In a bowl, mix flour, powdered sugar, salt, melted butter, and finely chopped pistachios until crumbly. Press evenly into the pan. Bake 15–20 minutes until lightly golden.
  3. While crust cools slightly, prepare filling: whisk eggs, granulated sugar, flour, baking powder, lemon zest, lemon juice, and vanilla until smooth.
  4. Pour filling over crust and sprinkle coarsely chopped pistachios on top.
  5. Bake 20–25 minutes until filling is set but still slightly jiggly.
  6. Cool completely on a wire rack, dust with powdered sugar, and slice into bars.
