Description

Herb roasted turkey breast is a juicy, flavorful holiday centerpiece with a fragrant herb crust and tender meat. Perfect for Thanksgiving, Christmas, or family dinners, it delivers all the flavor of a whole turkey in a smaller, easier-to-make dish.

  • 1 bone-in turkey breast (46 lb)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon, halved
  • Optional: butter under the skin (or plant-based butter)
  • Optional: dried herbs (substitute if fresh unavailable)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, combine olive oil, chopped herbs, garlic, salt, and pepper.
  4. Loosen the skin of the turkey and rub the herb mixture underneath and over the skin.
  5. Place turkey breast in a roasting pan, breast-side up. Stuff cavity with lemon halves.
  6. Roast for 1 hour 15 minutes to 1 hour 45 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part.
  7. Let rest for 15 minutes before slicing and serving.
