Description

Garlic Potato Pops are crispy, bite-sized potato balls made from cold mashed potatoes, garlic, cheese, and gluten-free breadcrumbs. They’re the perfect party appetizer, snack, or side creamy on the inside and golden on the outside.   • ¼ cup grated Parmesan cheese
  • 1 beaten egg
  • ¼ cup cornstarch

  • ¼ teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1 cup gluten-free panko breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed potatoes, garlic, cheddar, Parmesan, egg, cornstarch, salt, pepper, and parsley. Mix gently until smooth.
  3. Shape the mixture into small bite-sized balls.
  4. Roll each ball in cornstarch, dip in beaten egg, and coat with gluten-free panko breadcrumbs.
  5. Arrange on the baking sheet and drizzle with olive oil.
  6. Bake for 15–20 minutes, until golden and crisp.
  7. Cool for 5 minutes before serving.
