- Chill the dough for 30 minutes.
- Roll out the dough to about ¼-inch thickness on a lightly floured surface.
- Cut into desired shapes using a cookie cutter and place on a parchment-lined baking tray.
- Brush the tops with the remaining 1 egg yolk for a golden finish.
- Bake at 325°F (165°C) for 12–15 minutes, or until the edges are golden brown.
- Cool on a wire rack before serving.
