Ingredients

  • 100 g very soft salted butter
  • 75 g icing sugar
  • 4 egg yolks (3 for dough, 1 for egg wash)
  • 175 g all-purpose flour
  • ½ tsp baking powder

Instructions

  1. In a mixing bowl, cream together 100 g very soft salted butter and 75 g icing sugar until smooth.
  2. Beat in 3 egg yolks, one at a time, until well combined.
  3. Fold in 175 g flour and ½ tsp baking powder until a dough forms.
  4. Chill the dough for 30 minutes.
  5. Roll out the dough to about ¼-inch thickness on a lightly floured surface.
  6. Cut into desired shapes using a cookie cutter and place on a parchment-lined baking tray.
  7. Brush the tops with the remaining 1 egg yolk for a golden finish.
  8. Bake at 325°F (165°C) for 12–15 minutes, or until the edges are golden brown.
  9. Cool on a wire rack before serving.
