Cowboy Candy is a sweet and spicy candied jalapeño relish made by simmering fresh jalapeño slices in a sugar-vinegar syrup.   • 1012 fresh jalapeños, sliced into thin rings (remove seeds and membranes for less heat)
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • Optional: food coloring for vibrant color

Instructions

  1. Slice jalapeños into thin rings, removing seeds and membranes for milder heat.
  2. In a saucepan over medium heat, combine sugar, vinegar, garlic powder, and crushed red pepper flakes. Stir until sugar dissolves.
  3. Add sliced jalapeños and simmer for 15–20 minutes until syrup thickens and jalapeños become translucent.
  4. Using a slotted spoon, transfer jalapeños into sterilized jars.
  5. Pour the hot syrup over the jalapeños, filling jars to cover.
  6. Seal jars tightly and let cool before refrigerating.
  7. Store in the fridge for up to 3 months or freeze for up to 6 months.
