Description

3 Ingredient Oat Cookies are a wholesome, minimalist treat made with rolled oats, ripe bananas, and peanut butter.   • 23 ripe bananas, mashed
  • 1/2 cup peanut butter (or almond butter, or honey as a binder)
  • Optional mix-ins: chocolate chips, raisins, shredded coconut, nuts, chia seeds, or spices (cinnamon, vanilla, cocoa powder)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a bowl, mash bananas until smooth.
  3. Mix in peanut butter (or substitute) until combined.
  4. Fold in rolled oats until evenly coated.
  5. Scoop portions onto the baking sheet, shaping into cookies.
  6. Bake for 12–15 minutes, until edges are lightly golden and centers set.
  7. Cool on the baking sheet before transferring to a wire rack.

Notes

  • Use rolled oats, not steel-cut, for proper binding.
