Description

A rich, creamy corn dish made effortlessly in a slow cooker, combining whole kernel corn with cream cheese, butter, and milk for a velvety texture. Ingredients

– 3 cans (15.25 oz each) whole kernel corn, drained

– 8 oz cream cheese, cut into pieces (or substitute with sour cream, mascarpone, or Greek yogurt)

– ½ cup unsalted butter, cut into tablespoon pieces (or use plant-based butter for vegan option)

– ½ cup milk (whole milk, almond milk, or oat milk for dairy-free)

– 1 tablespoon granulated sugar (optional, omit for low-sugar diets)

– Salt and black pepper, to taste

– Optional garnish: Fresh parsley, chopped


Instructions

  1. Drain the canned corn and add it to a 4-quart slow cooker.
  2. Stir in the cream cheese, butter, milk, sugar, salt, and black pepper until combined.
  3. Cover and cook on LOW for 2–3 hours, stirring every 30 minutes to prevent sticking and ensure even melting.
  4. Once the butter and cream cheese are fully melted and the mixture is creamy, taste and adjust seasoning with additional salt, pepper, or sugar as needed.
  5. Transfer to a serving dish and garnish with fresh parsley if desired. Serve warm.

Notes

– For a low-fat version, replace cream cheese and butter with reduced-fat alternatives or use Greek yogurt for added tang.

– To make it vegan, use plant-based cream cheese, butter, and milk substitutes like almond or oat milk.
