Ingredients
For the Blueberry Jam:
– 1 pint (2 cups) fresh blueberries (or thawed frozen blueberries, drained)
– ¼ cup sugar
– 1 tablespoon lemon juice
– 1 small bundle of lemon thyme (tied with kitchen twine)
For the Sandwiches (makes 4):
– 8 slices sourdough bread (or substitute with whole wheat, rye, or gluten-free)
– 4 oz shredded mozzarella cheese
– 4 oz grated white cheddar cheese
– 4 tablespoons unsalted butter, softened
– Flaky sea salt, for finishing
Instructions
- Make the blueberry jam: In a 2-quart saucepan, combine blueberries, sugar, lemon juice, and thyme bundle. Bring to a simmer over medium heat. Cook for 15–20 minutes, stirring occasionally, until thickened and jam-like. Remove from heat, discard thyme bundle, and let cool slightly.
- Assemble sandwiches: Butter one side of each slice of bread. Place a slice of bread, buttered-side down, in a preheated 12-inch cast iron skillet over medium-low heat.
- Layer with mozzarella, white cheddar, and 1–2 tablespoons of warm blueberry jam. Top with a second slice of bread, buttered-side up.
- Cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown, crispy, and cheese is fully melted. Cover with a lid for the last minute to help melt the cheese if needed.
- Transfer to a cutting board, sprinkle with flaky sea salt, and serve immediately.
