Filling:
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 2 tablespoons butter
Coating:

Instructions
- Cream together butter, sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually mix in flour, baking powder, and salt until dough forms.
- Chill dough for 30 minutes.
- Roll dough into small balls, flatten slightly, and place on parchment-lined baking sheets.
- Bake at 350°F (175°C) for 8–10 minutes until golden at the edges.
- Cool completely.
- For the filling, mix peanut butter, powdered sugar, and butter until smooth.
- Spread filling between two cookies to form sandwiches.
- Melt chocolate chips (with optional shortening) and dip cookies.
- Chill until chocolate sets before serving.
