Cheesecake Filling:
- 8 oz cream cheese, softened (or dairy-free alternative)
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 large egg (or ¼ cup applesauce for vegan)
Cinnamon Swirl:
- 2 tablespoons melted butter
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk (or almond/oat milk)
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press evenly into pan. Bake 8–10 minutes until golden.
- In a bowl, beat cream cheese, sugar, vanilla, and egg (or applesauce). Spread evenly over crust.
- Mix melted butter, brown sugar, and cinnamon. Drizzle over filling. Swirl with a knife.
- Bake 25–30 minutes, until center is set and edges are golden.
- Cool completely, then chill 1–2 hours.
- Whisk powdered sugar, milk, and vanilla into a glaze. Drizzle over chilled bars.
- Slice and serve.
