For the Salmoriglio Sauce:

  • 1/4 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • Pinch of salt and pepper

Instructions

  1. Season chicken breasts or thighs with salt, pepper, and olive oil.
  2. Heat a skillet over medium-high heat. Cook chicken for 5–7 minutes per side, until golden brown and internal temperature reaches 165°F.
  3. While chicken cooks, prepare the salmoriglio sauce: whisk olive oil, lemon juice, garlic, parsley, oregano, salt, and pepper until combined.
  4. Remove chicken from skillet and let rest for 5 minutes.
  5. Drizzle the salmoriglio sauce generously over the chicken before serving.

Notes

  • For extra flavor, marinate chicken in half of the salmoriglio sauce for 30 minutes before cooking.
  • Store leftovers in the fridge for up to 3 days or freeze chicken and sauce separately for up to 3 months.
