For the Brioche Dough:
- 1 cup whole milk (warm, about 110°F / 43°C)
- 2¼ teaspoons active dry yeast
- ⅓ cup granulated sugar
- 1 large egg
- ¼ cup melted butter
- 1 teaspoon vanilla extract
- 3½ cups all-purpose flour
- 1 teaspoon fine sea salt
For the Sweet Cheese Filling:
- 8 ounces farmer cheese
- 8 ounces cream cheese
- ¼ cup sour cream
- ½ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- Optional: lemon zest or raisins
For Assembly:
- 1½ cups fresh or frozen blueberries
- 1 large egg + 1 tablespoon milk (for egg wash)
- Coarse or granulated sugar, for sprinkling
Instructions
- Warm milk to 110°F (43°C). Mix with yeast and let sit 5–10 minutes until foamy.
- Add sugar, egg, melted butter, vanilla, flour, and salt. Knead until smooth and elastic (about 8–10 minutes).
- Place dough in a greased bowl, cover, and let rise 1–2 hours until doubled.
- Meanwhile, make the filling: combine farmer cheese, cream cheese, sour cream, sugar, egg yolk, and vanilla until smooth. Add lemon zest if using.
- Roll out risen dough into a rectangle. Spread the filling evenly and sprinkle blueberries on top.
- Roll up the dough, slice into even pieces, and shape into buns.
- Place on a parchment-lined baking sheet, cover, and let rise 30–45 minutes.
- Brush with egg wash and sprinkle with sugar.
- Bake at 375°F (190°C) for 18–22 minutes or until golden brown.
- Cool slightly before serving.
Notes
- Knead only until dough is smooth overworking makes it dense.
- Add cinnamon, nutmeg, or nuts for extra flavor.
- Store in an airtight container up to 4 days in fridge or freeze for up to 2 months.
