Description

Soft, buttery brioche buns filled with creamy cheese and sweet blueberries a delightful pastry perfect for breakfast, brunch, or dessert. Fluffy, rich, and easy to make, these buns bring a bakery-quality treat to your kitchen.

For the Brioche Dough:

  • 1 cup whole milk (warm, about 110°F / 43°C)
  • 2¼ teaspoons active dry yeast
  • ⅓ cup granulated sugar
  • 1 large egg
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • 3½ cups all-purpose flour
  • 1 teaspoon fine sea salt

For the Sweet Cheese Filling:

  • 8 ounces farmer cheese
  • 8 ounces cream cheese
  • ¼ cup sour cream
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • Optional: lemon zest or raisins

For Assembly:

  • 1½ cups fresh or frozen blueberries
  • 1 large egg + 1 tablespoon milk (for egg wash)
  • Coarse or granulated sugar, for sprinkling

Instructions

  1. Warm milk to 110°F (43°C). Mix with yeast and let sit 5–10 minutes until foamy.
  2. Add sugar, egg, melted butter, vanilla, flour, and salt. Knead until smooth and elastic (about 8–10 minutes).
  3. Place dough in a greased bowl, cover, and let rise 1–2 hours until doubled.
  4. Meanwhile, make the filling: combine farmer cheese, cream cheese, sour cream, sugar, egg yolk, and vanilla until smooth. Add lemon zest if using.
  5. Roll out risen dough into a rectangle. Spread the filling evenly and sprinkle blueberries on top.
  6. Roll up the dough, slice into even pieces, and shape into buns.
  7. Place on a parchment-lined baking sheet, cover, and let rise 30–45 minutes.
  8. Brush with egg wash and sprinkle with sugar.
  9. Bake at 375°F (190°C) for 18–22 minutes or until golden brown.
  10. Cool slightly before serving.

Notes

  • Knead only until dough is smooth  overworking makes it dense.
  • Add cinnamon, nutmeg, or nuts for extra flavor.
  • Store in an airtight container up to 4 days in fridge or freeze for up to 2 months.
  • Reheat at 350°F (175°C) for 5–10 minutes, covered with foil.
