Description

Blueberry Breakfast Quesadillas are a sweet and savory twist on classic quesadillas, featuring juicy blueberries, melted cheese, and optional additions like eggs or bacon, all crisped inside a tortilla.   • 4 flour or whole wheat tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or cream cheese spread)
  • 1 cup fresh or frozen blueberries (pat dry if frozen)
  • Optional: 2 scrambled eggs
  • Optional: 2 slices cooked bacon or sausage, crumbled
  • 12 tsp honey, for drizzling
  • ½ tsp ground cinnamon
  • 1 tbsp butter or oil for cooking

Instructions

  1. Prepare fillings: shred cheese, cook eggs or bacon if using, and pat blueberries dry.
  2. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla, then top with blueberries and any optional fillings.
  4. Fold the tortilla in half and cook 2–3 minutes per side until golden brown and cheese is melted.
  5. Remove from skillet, slice into wedges, and drizzle with honey or sprinkle with cinnamon.
  6. Serve warm with yogurt, fresh fruit, or maple syrup for dipping.

Notes

  • Use fresh blueberries for less moisture, or pat frozen ones dry before adding.
