Description

Apple Cider Cinnamon Bread is a moist, spiced quick bread infused with reduced apple cider, warm cinnamon, and topped with a sweet cinnamon sugar crust. This cozy fall loaf delivers the perfect balance of apple flavor, warm spice, and buttery texture ideal for breakfast, dessert, or a comforting afternoon treat.

Ingredients

Scale

For the Bread:

  • 1½ cups apple cider (reduced to ½ cup)
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

For the Topping:

  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Reduce the apple cider: In a saucepan, simmer 1½ cups of apple cider over medium heat until it measures ½ cup. Let cool.
  2. Prepare the oven and pan: Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  3. Mix the wet ingredients: In a mixing bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, sour cream, reduced apple cider, and vanilla extract until smooth.
  4. Combine the dry ingredients: In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Make the batter: Gradually add dry ingredients to wet ingredients, stirring just until combined.
  6. Bake: Pour batter into prepared loaf pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Add topping: While still warm, brush the loaf with melted butter and sprinkle with the cinnamon-sugar mixture.
  8. Cool and serve: Allow to cool slightly before slicing. Enjoy warm or at room temperature.

Notes

  • Do not overmix the batter for best texture.
  • Add extra spices like cloves or ginger for a bolder flavor.
  • Store at room temperature for up to 3 days or freeze slices for up to 2 months.
  • To reheat, warm slices in a 350°F (175°C) oven for 5–10 minutes or lightly toast before serving.
  • For a vegan version, replace butter with plant-based butter and eggs with flax eggs.
